Peter trained in Sydney and then went onto work in the Superyacht industry as a Head Chef. He has cooked for the rich and famous and travelled the world thus gaining invaluable experience in all different cuisines. After yachts he moved back to Sydney and worked in Michelin Star restaurants before moving up to Byron to create his own dining experience here at Hidden Valley.
Cooking over fire is his favourite way to cook as it brings a rich, unbeatable flavour to any dish which cannot be achieved in a normal kitchen. He can cook any cuisine but favours Australian, Thai and Mediterranean flavours. With a strong focus on fresh, locally sourced produce Peter brings the flavour to every dish.

When we moved here we wanted to make the most of this rich land. So started a market garden. This is where you will find Peter most of the time!
We are planting a variety of fruits and vegetables in a permaculture environment so not to deplete the soils richness and encourage biodiversity.
This is our dragonfruit walkway. Every crop is interspersed with flowers and beneficial plants to encourage bees and put back nutrients into the soil.
Our greenhouse is a hype of activity that is ever evolving. We nurture the seedlings in here before planting them out in the garden.
We grow all types of citrus - lemons, oranges, tangelos, limes, grapefruits, mandarins. We also have avocados, peaches, nectarines, apples, finger limes, coconuts, pineapple, passionfruit, figs...and the list is growing!
Everything you can dream of here! Rosemary, basil, coriander, chilli, kafir lime, thyme....
Take a moment and look at the abundance of wildlife. Wallabies, echidnas, black cockatoos, galahs, sugar gliders, tawny owls, sea eagles, bandicoots, king parrots etc .....
We have 12 hens and so have plenty of eggs! They are happily free ranging in our garden - come and visit them.
Our place is surrounded by a stunning creek with tumbling waterfalls and rainforest. Feel free to wander around and explore!
